Christmas Chip Cookie

I like to bake cookies, and I'm always trying to design something new and yummy.
My 2011 Christmas Cookie creation is not only festive looking in color, but tastes spectacular!
I hope you try it out and enjoy it as much as we do!


Christmas Chip Cookies

Ingredients:
1 1/8 c all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c butter flavor shortening
3/4 c dark brown sugar
1 Tbsp vanilla extract
1 Tbsp vanilla powder
1 Tbsp allspice, ground
1 lg egg
1/2 c vanilla or white chocolate chips
1 c dried cranberries; original
1 c coarsely chopped pistachios


Directions:
1. Pre-heat the oven to 350F degrees.

2. Lay a sheet of foil, shiny side up on a cookie sheet; spray with non-stick cooking spray.

3. Mix ingredients together in order till soft dough is formed.

4. Roll dough into bite-sizes balls.
this cookie dough was amazing to taste too!


5. Lay 3 across-4 down (1 dozen) on the cookie sheet.

6. BAKE FOR ONLY 8-10 ONLY- NO LONGER!!! They will burn! No peeking either! :)

7. Remove from oven, and let the cookie sheet "slam" down to let the cookies "fall".


8. Cool cookies on sheet for 5 minutes, then remove to wire cooling rack.

9. Respray cookie sheet after each baked batch if baking more cookies.

Frozen Yogurt Bites

Want an easy, healthy snack that takes literally minutes to prepare that even the kiddo's will enjoy? Look no further! Frozen Yogurt Bites What you need: wax paper  cookie sheet  1 single serving-size pkg of your favorite yogurt (I used lite blackberry)  1 ziploc sandwich bag  lite blackberry yogurt Step 1: Cut and line your cookie sheet with wax paper (splash drops of water on pan if paper won't stay) Step 2: Empty the yogurt cup into the ziploc baggie and seal Step 3: Snip a hole in a bottom corner Step 4: Dot your cookie sheet with yogurt!  You don't have to be fancy,  or put them in a straight line- unless you want to.  They're not going to change in height or size,  and they won't run into each other either, so your choice! Jello Fruit Snacks

These are seriously easy and yummy! You need a jello mold or silicone mold, and the smaller the mold, the more quantity you'll get.   To start, you'll need: 1/3c. water 1 small (3 oz) package of your favorite flavor of J-E-L-L-O (we used lime) 2- 0.25 envelopes of unflavored gelatin 1 small sauce pan   1: measure water into sauce pan, and sprinkle all the gelatin on top of the water.   2: put the stove heat onto medium heat. 3: Stir until gelatin is completely dissolved. 4: When gelatin is ready, pour into mold. I used a silicone ice cube tray, and only filled up the bottom.   5: Let the mold sit for about 2 hours.  6: Gently pull the snacks out of the mold. Serve! They are slightly sticky, which can be remedied with a light dusting of cornstarch, or leaving them to dry out a bit overnight. She approves!
