Christmas Chip Cookie

I like to bake cookies, and I'm always trying to design something new and yummy.
My 2011 Christmas Cookie creation is not only festive looking in color, but tastes spectacular!
I hope you try it out and enjoy it as much as we do!


Christmas Chip Cookies

Ingredients:
1 1/8 c all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c butter flavor shortening
3/4 c dark brown sugar
1 Tbsp vanilla extract
1 Tbsp vanilla powder
1 Tbsp allspice, ground
1 lg egg
1/2 c vanilla or white chocolate chips
1 c dried cranberries; original
1 c coarsely chopped pistachios


Directions:
1. Pre-heat the oven to 350F degrees.

2. Lay a sheet of foil, shiny side up on a cookie sheet; spray with non-stick cooking spray.

3. Mix ingredients together in order till soft dough is formed.

4. Roll dough into bite-sizes balls.

5. Lay 3 across-4 down (1 dozen) on the cookie sheet.

6. BAKE FOR ONLY 8-10 ONLY- NO LONGER!!! They will burn! No peeking either! :)

7. Remove from oven, and let the cookie sheet "slam" down to let the cookies "fall".


8. Cool cookies on sheet for 5 minutes, then remove to wire cooling rack.

9. Respray cookie sheet after each baked batch if baking more cookies.

Banana Lavender Raspberry Beer Bread

       Banana's... So great for you, but they change so quickly into mush, making it difficult to eat them by themselves. In walks good ol' banana bread!  I had posted my Buttermilk Banana-Zucchini Bread before, but I wanted to try something different.  Wasn't digging the idea of something super sweet, so I opted for a spin on a general beer bread.  I don't usually have beer around, but today, I had a couple 12 oz. cans of Rübæus Raspberry Ale from a local brewery called Founder's located here in Detroit. Pineapple Upside Down Cupcakes w/ Browned Butter Icing

Recipes: Pineapple Upside Down Cupcakes Topping: 1c. brown sugar, 1/2 c. butter, 24 pineapple chunks Cake:  1-2/3 c. flour, 3/4 t. vanilla, 1T. nutmeg 3/4 t. b. powder, 1/2 t. salt, 1-3/4 c. sugar, 1 c. Butter Crisco, 4 eggs, 3/4 c. sour cream, 1 T. cinnamon 1T. ground cloves Topping: melt in small saucepan brown sugar & butter till dissolved & bubbly. spoon small amt. into cupcake liners and place 1 pineapple in center of liner. Preheat oven to 350 F° Mix cake together and spoon batter into liners almost full. Bake about 1 hour or till toothpick comes out clean. *option- dip tops in icing recipe below MAKE DOUBLE BATCH OF ICING!!!
