Mulling Spices

Usually, mulling spices are used to spice up a
yummy hot drink such as wine or Apple Cider,
but I also use mulling spices in my cooking and baking.

Mulling Spices

Ingredients:
  • 15 double-layer cheesecloth 5-inch squares
  • 14 (10-inch) lengths of white string
  • 3 oz whole cinnamon sticks
  • 6 whole nutmegs (1 ounce)
  • 1/3 c chopped dried orange peel
  • 1/3 c chopped dried lemon peel
  • 1/4 c allspice berries
  • 1/4 c whole cloves
  • 2 Tbsp finely chopped, crystallized ginger (1 ounce)

Directions:
1. Place cinnamon sticks and nutmegs into a heavy freezer bag. Hit the spices with the bottom of a small heavy skillet to break them into small pieces. Place in a bowl and stir in orange peel, lemon peels, allspice, cloves, and ginger.

2. Place about 2 tablespoons of the spice mixture in the center of each cheesecloth square. Tie securely with the string. If giving as a gift, be sure to include the mulled wine or apple recipes instructions (below).

3. Yield: 14 bags apple mulling spice mix (each will spice a 750 ml bottle of red wine - 3-1/4 cups wine or 1/2 gallon - 8 cups apple cider)

Mulled Wine Recipe

Combine water and sugar in a 2-quart saucepan over medium heat. Stir until sugar dissolves. Add wine and spice bag. Heat very slowly over low heat, only until small bubbles form around the edge and wine is very hot. Do not boil. Discard spice bag and serve hot.

Mulled Apple Cider Recipe

  • 1 mulling spice bag

Place apple cider in a 3-quart saucepan and add spice bag. Bring to a boil, reduce heat, cover, and simmer for 30 minutes. Discard spice bag and serve hot.

Banana Lavender Raspberry Beer Bread

Banana's... So great for you, but they change so quickly into mush, making it difficult to eat them by themselves. In walks good ol' banana bread!  I had posted my Buttermilk Banana-Zucchini Bread before, but I wanted to try something different.  Wasn't digging the idea of something super sweet, so I opted for a spin on a general beer bread.  I don't usually have beer around, but today, I had a couple 12 oz. cans of Rübæus Raspberry Ale from a local brewery called Founder's located here in Detroit. This is a beautiful, fruity ale that has become a local favorite of mine, and who doesn't like to support local businesses, right? This makes 2- 9"x5" loaves. Here are the items you'll need to gather: 5 Mashed Bananas 6 cups of Flour 2 TBS Baking Powder  2 tsp Salt 1 TBS Cinnamon 2 TBS Dried Lavender Blossoms 1 TBS Vanilla Extract 2-12oz cans of Rübæus Raspberry Ale 12 TBS Melted Butter 4 Sprigs of Dried Lavender (optional) You'll want to pr...

Fresh Ricotta Cheese

Yes, I did. I made fresh ricotta cheese.  I have been nostalgically craving the homemade goat cheese I would make when I was much younger.  I don't have the recipe, and I have no goat, so I scoured the internet, found a recipe that seemed familiar, and used whole milk and cream from my local grocer. I was SO excited to make this today, and it only takes minutes!  AND IT IS SOOOOO GOOD! SOO AMAZING!  Fresh Ricotta Cheese (for the record, I made 1/2 of the following recipe) Ingredients: 8 cups whole milk 1 cup heavy whipping cream 1/2 teaspoon salt 3 Tbsp lemon juice Directions: 1.  Prepare a sieve lined with fine mesh cheesecloth (I used a thin hand towel from IKEA) and place it over a large bowl, set aside.  2.  Into a large stockpot add milk, cream and salt and bring to a rolling boil. Stirring constantly.  3.  When it has reached a rolling boil add lemon juice, reduce heat and stir until mixture curdle...
